5 A climate-conscious cafe

The restaurant – managed by Novae – holds Eco Entreprise DD and CSR certification, as well as the international Responsibility Europe certification, a recognised and comprehensive measure of sustainability that takes into account environmental, social and economic aspects and is regularly subject to external verification in accordance with the requirements of the relevant certification scheme.

Café Byron is also part of the Swisstainable programme. This sustainability programme brings together businesses and organisations from across the Swiss tourism sector. The restaurant is classified at Level III – ‘leading’. Swisstainable is not a certification scheme.

By participating in the Swisstainable programme, the restaurant is committed to continuously improving its sustainability practices, notably through the following concrete measures:

  • A ban on transporting food products by air
  • 60 per cent of fresh food products sourced from Switzerland – excluding fish
  • 85 per cent of the meat comes from Switzerland, with the remainder being exclusively of French origin.
  • A commitment to using seasonal fruit and vegetables
  • Daily monitoring of the number of vegetarian dishes sold and of food waste, with a view to reducing the amount of unsold food

Snack bar

Fancy a quick drink while taking in one of the most beautiful views of Chillon?

Tucked away in the Savoy Garden, the castle ‘buvette’ or ‘snack bar’ will help quench your thirst and feed those hunger pangs at the foot of the castle, a stone’s throw from Lake Geneva.

The snack bar is open when weather conditions allow.
